6 months of vegetables.

I can’t believe I’m coming up on SIX months of vegetarianism so quickly. Time has flown by, and I’ve certainly learned quite a bit about health, nutrition, and how big the vegetable movement is.

Just as I try to count how many paper and plastic bags I’ve saved by saying to the cashier who insists that my burrito I plan to eat at home needs a bag. “I really don’t need a bag, I’ll just carry the burrito out without it.” Every bag I save helps save the environment.

I wonder how many chickens, cows, pigs, and other animals I’ve saved? Or further more how my little piece of this has effected the economy by encouraging farmers to grown more lettuce, and less chicken.

I’ve certainly seen my grocery bill shift over the past months, I spend probably 50% or more of the total in the fruit and vegetable section, and 0% in the meat area.

Anyone who is starting out on this veggie path, I encourage you to continue. I think once you get to six months your in the swing of things, it will be easy to continue. You’ve gotten past the comments and questions from friends and family, you’ve learned how to order successfully at restaurants that don’t offer salads without meat on them, and you’ve seen the health benefits of this lifestyle.

At this point I’ve lost almost 20lbs, and dropped 19 cholesterol points. My I’m only 5 pounds away from my target weight now! I feel I have more energy, and a mental focus that is quick and sharp. I hope you feel the same way.
