Heterocyclic Amine or better known as HCA’s, are a chemical compound known to cause cancer. Yikes! Sounds dangerous right? How do I avoid this compound? STOP GRILLING MEAT. When cooking animal flesh over high heat these HCA’s are created, and are the same ones found in cigarette smoke.
Of course there are a few ways you can help reduce these HCA’s from being created in your meat. Pre-cook them in the microwave slightly, soak them before hand in tomato, teriyaki or other sauces. Even herbs and other vegetables help counter act the creation of HCA.
Honestly though, the best way? Grill vegetables. No problems there.
